Easy to make family Pikelets.

For those of you who want something to do with the kids over the holidays I have the perfect suggestion.  Make a batch of Pikelets! This is a very simple recipe that my parents used to use when I was growing up.

PIKELETS

4 Eggs
1 Cup Sugar
2 Cups of Milk (approx)
4 Cups of Flour.
4 Teaspoons of baking powder.
1/2 Tea spoon of baking soda.
1 Teaspoon of salt.
100 Grams of Butter.

Start off by beating the eggs and sugar until they become thick.  Add the milk to the flour, salt, baking soda and backing powder.  Lastly add the melted butter.  Mix everything together until you get a smooth texture then cook in a hot fry pan or girdle.

Make sure your pan is not to hot.  Cook them slowly until you see bubbles in the mix and then flip them over. Yummy!
